Chocolate Banana cupcakes with Caramel

I made these this evening. Very quick to make, although I think if I made them again I would perhaps use a bit more sugar but I think with the caramel it all balances out.

Coconut and Raspberry Jam Slices and Tarts

The recipe I followed for this was pretty stupid actually so I had to change it up quite a lot. All the measurements were wrong and it was not something I’d reccommend to follow.
However they came out like this and they taste delicious.

Spiced Carrot Cake

This carrot cake was delicious, although I followed a recipe for this which didn’t quite work completely without adjustments, especially the frosting!

Raspberry Jam Filled Cupcakes

With Raspberry Jam Buttercream

Again I was making these in a rush so it was just the simple mixture with a dollop of raspberry jam in. The trick is to make sure your cupcake cases aren’t too full, and you layer the mix so it’s sponge, jam, sponge. You must make sure that you seal in the jam with your mixture (so you can’t see any jam anymore) This ensures that the jam doesn’t boil and you don’t end up with exploded cupcakes!

I didn’t have much time for decoration but the buttercream was again a simple mix but I substituted some of the butter with a teaspoon or two of raspberry jam, dusted icing sugar on the cakes and just dolloped a blob on the top. If i’d had any raspberries I think it would have made a nice touch so finish them off

Zesty Lemon Cupcakes

I had to make these in a rush for somebody’s party, so it was just a simple sponge cupcake mix (as used in the vanilla cupcakes) with the zest of one lemon and juice of half a lemon.
To decorate I piped on buttercream, making the buttercream very stiff and using lemon juice to soften it and give it a lemon-y flavour. I also added a bit of yellow food dye to these to make them look extra fruity.
